Pumpkins are a staple during Halloween and provide great health benefits. Pumpkins are packed with vitamin A, which is great for our eyes, vitamin C, which is great for the immune system, and beta-carotene, which is great for our skin and eyes.
Pumpkin Nuggets Recipe
Ingredients⇾500 g pumpkin, cleaned and seeded and cubed
⇾100 g sweet potatoes, peeled and cubed
⇾1 onion, chopped
⇾¹/₂ tsp thyme
⇾¹/₂ tsp rosemary
⇾¹/₂ tsp chili powder
⇾salt and pepper, to taste
⇾1-liter vegetable, oil for frying
MethodBoil the pumpkin and sweet potatoes until tender. Drain and set aside to cool. Saute the onions and herbs., until the onion is soft and transparent. Mash together with the pumpkin and sweet potatoes. Season with salt, pepper and chili powder.
Take a large spoonful of the mixture and shape into a ball. Deep fry until golden. Serve the nuggets while hot.
